
Sugar Free Blueberry Spread
Makes: approx. 200mL
INGREDIENTS
- 300g fresh or frozen blueberries
- 2 tbsp water
- Juice from half a lemon
- 2 tbsp ground chia seeds
- 1 tsp vanilla extract (optional)
NOTE: you can use other berries but it’s best to start with ones that are naturally sweet as this is sugar-free.
METHOD
1. Combine the berries in a saucepan with the water and lemon juice (and vanilla if using). Cover and bring to the boil.
2. Remove the lid and cook on a medium heat for about 13-15 minutes, stirring regularly. The mixture will reduce. Mash the berries down with a wooden spoon while it’s cooking.
3. Once the mixture is reduced, add the chia seeds and stir. Bottle immediately into a sterilised jar.
NOTE: Since there is no preventing agent in this spread, make when you know you want to use this spread and use smaller jars instead of large ones to reduce waste. Once the jar is open, keep refrigerated or use within a week or so. If you want to add some non-sugar sweetner, add it AFTER the cooking is done.
