Pear & Vanilla Jam

A favourite of my family, this is great to make over the winter months when pears are seasonal.

The jam turns out to be a translucent pale yellow colour, and the addition of the vanilla seeds appear as flecks suspended in the jam. Use pears that are firm for added pectin. This means, however, that you will need to cook down the pears before adding the sugar to soften them a bit.
